Fried Squid with Ginger and Spring Onion Recipe

Recipe Ingredients:

300g cuttlefish

50g fresh ginger (sliced)

3 stems spring onion (sectioned)

1 tbsp chopped garlic

1 tbsp Shaoxing wine

150ml chicken stock

Seasoning:

1 tbsp oyster sauce

1 tbsp light soy sauce

1 tsp monosodium glutamate

¼ tsp salt

1 tsp sugar

¼ tsp sesame oil

A pinch of pepper

Method:

Rinse the cuttlefish and cut into florets. Blanch into boiling water for a while. Dish up and drain well. Keep aside.

Heat up 2 tbsps oil to stir-fry ginger slices and chopped garlic till fragrant. Sprinkle with a little Shaoxing wine, stir well. Place in cuttlefish and seasoning, stir until aromatic.

Pour in chicken stock, bring to a boil, stirring constantly over high heat for a while. Lastly, add in sectioned spring onion, stir until well combined. Thicken the sauce with a little cornstarch solutions. Dish up and serve hot.
